Seems weird to me that UMS just doesn't transcode to one of the several formats the PS4 supports. :-/ Perhaps AAC or MP3 or something...

Well, it was worth a shot. Have you tested UMS with another computer, maybe with Windows and/or Linux. Just to test whether it's a OS X specific problem or not. Okey, nice to get that confusion out of the way ;P But it seems to me like you may have to modify the "PhilipsPFL.conf" file in the "renderers"-folder. I may be wrong... :( In this file it is specified what formats is supported by you TV. And some other things too... This is base...

I'm no expert but it seems like the process (MEncoder) is starting and about 5-10 seconds afterwards it kills itself, which is strange...
Have you tried forcing to use FFmpeg through the transcoding folder? (I think the UMS project is about to switch to FFmpeg by default soon anyway)
