OK If I understand you well your TV doesn't see all media from your NAS so not all media are supported by your TV. In that case unsupported media must be transcoded. I don't understand your question. Why do you use UMS when you want to use your NAS to do that job?

In the path "Program Files\Universal Media Server\renderers" there is a file SharpAquos.conf. Put the to that file.

No. It could be e.g. "Supported = f:mkv v:mp4|h264 a:ac3|dts|dtshd|truehd|aac|lpcm|mpa|mp3|flac m:video/x-matroska". Pleas read the PS3.conf. There is an explanation of all parameters and choose video and audio parameters your renderer supports for MKV files.

Whe you are browsing UMS on your TV except of the media files you should see the TRANSCODE folder. If it is not present you have to enable it on the Navigation/Share Settings tab. In that case the only way is to go to the TRANSCODE folder and choose the audio you want to play. Is impossible to distinguish between two undefined languages. This is a problem of people who code the video to set everything properly.

After a long discussion it semms to me that the problem is only with Sony renderers and the most elegant solution is to use CustomMencoderOptions =-vf softskip,expand=::::1:16/9:2,scale=1283:720 -lavcopts aspect=16/9 for renderers which need it and not to hardcode it.
