Any reason why all video defaults to mpeg and not AVC?

Yes.

It's your renderer default value, "TranscodeVideo=MPEGPS-MPEG2-AC3", for videos unsupported by your PS3.
That mean that MKV and all others natively unsupported videos files will be transcoded to MPEG (MPEG-2/AC3).

So with UMS 5.1.3 which I have been using for a while, most MKV's default to AVC. I can post the logs later, whats difference between the versions of UMS? Why does my 5.1.3 default to AVC and 6.60 defualt to mpgeg2?

I don't understand what you mean ? I guess that the answer should be in your UMS.conf file that you unselect from the ZIP debug file...

With UMS 5.1.3 version your MKV file are transcoded to MPEG, as expected:
TRACE 17:06:13.917 [New I/O worker #3] File "Ash.vs.Evil.Dead.S02E01 - Home.mkv" will not be streamed because it is not supported by the renderer
TRACE 17:06:13.917 [New I/O worker #3] Matched support line f:mpegps v:mpeg1|mpeg2|mp4|h264 a:ac3|lpcm m:video/mpeg

Why does the ps3 show AVC, is there a difference in quality with AVC vs mepg2? I feel like AVC looks better or am I just imagining thing? I attached a screen shot.
