Mkv /w AC3 on VLC for iPad not playing sound ?

The AC3 codec was removed from VLC for iOS and all iOS apps, so all my ripped DVDs (Mkv/AC3) don't have sound streaming from UMS now, VLC still plays Mkv files fine from UMS (just not AC3 sound now).

Does anyone know how to change the ipad/iphone default profile to transcode the audio and/or video to a supported format in VLC for iOS ?

Can UMS transcode the audio format only (AC3 to something else) ?
