You can only stream the movie if your renderer supports receiving the file via UPnP AV/DLNA. If your renderer configuration is correct, UMS will always stream the file if possible. Transcoding is done when the file can't be streamed.

When UMS is going to transcode 4K video is impossible to do it on the fly with processor Core i5-760. Only when streaming video as it is it could work.

That's quite likely, as the audio codec used has very little support. It might be that FFmpeg and other transcoding engines can't handle it properly.

You have to install MediaInfo from this page https://mediaarea.net/en/MediaInfo open the media file and set the MediaInfo to text view. Then you can either export the result or simply copy the text from the view and put it here.

Try attached conf. In the original Samsung-UHD.conf were wrong settings. "aac" instead of "aac-lc" and "aac-he" instread of "he-aac". That is why your video is transcoded with all that side effects. Transcoding 4k video on the fly is really CPU demanding task.
