I may have found the solution for this. I actually reinstalled the program but this time I installed it onto my NAS drive. Also when I installed it I checked to show advanced options. I don't know which one fixed it but I do have all of the settings now.

Came here to agree with this. I had tried several programs to stream my files from a NAS drive to DirecTV HD DVR. This is the first one that worked right out of the box. But I did notice I have this same exact problem I am missing all Transcoding settings.
First time ever installing this program ...
