Is your LAN port on the PC 100Mbit? If so that seems very slow, even my 10+ year old motherboard has 1Gbit LAN and since you have USB 3.0 I would think yours would have that too. This topic is 8 years old and has no bearing on how UMS works now.
At the time you had to install the K-like codec pack for the new codecs that were just started to be used that is now standard, things like MKV and H265.

I think the Roku thing is a known problem after they did a firmware update which stopped the controls working. There has been a few posts on it and I think voice controls still work. I have no idea what they have done that has broken this and I'm not sure if it happens just with UMS but other server...

That depends on the renderer, but play/pause/stop should work on all even if they can take some time to actually do something. Some renderers can be very slow to react. I never saw this at the time to answer. Also the #--TRANSCODE--# folder has to have every combination of subtitle and audio track as when transcoding only one of each can be used at a time as the subtitles will be burned into the video stream. there is no option to limit this to just one language. Unfortunately not as some renderers will sort the files in alphabetical order no matter the order sent by UMS. Samsung and Playstation 4 are 2 main offenders I know of. Ah I did not realise you were accessing UMS from an external network. As far as I know UMS is officially meant to serve the local network but I know some people have it working on an external network.
