I use my western digital live media box as the renderer for UMS,which is a great program by the way. My question is,what settings within UMS, do I need to set to make the western digital live media box, do the heavy lifting,(transcoding) as opposed to the computer I run the program on, when playing media files? Thank you.

The WD media box only plays the media, it does not do any transcoding and it probably does not have enough processing power to do it anyway.

The reason that videos will need to be transcoded is that they will be in a format that is unsupported, for example h265 which is very common now.
