Internet streaming?
How do I use UMS to stream from my Windows desktop PC to my laptop over the internet? Is there some way with VLC?

Use the UMS Web interface with your favorite browswer on the laptop you want to watch movies on.

For some reason, I couldn't find any solid documentation on this web interface, but I did find the info I need from this thread.
I was able to connect to my server via http://myipaddress:9001
Anyway, so this is pretty cool but is there any way to stream through a player of some kind instead of the web browser?

Not that I am aware of. VLC maybe, but I really don't know. I'm bored so I'll tinker with VLC for a few minutes to see if I come up with anything. If you don't hear from me again tonight it means I wasn't successful.
