Are you trying to use the embedded sub track or a separate sub file (.str)? My D series Samsung supports only external subs (must be the same filename as the video file). Maybe your H series have the same issue when streaming through UMS. You should put the subs into an external file and give it a shot (after removing the ffmpeg.exe :) ).

External .srt files and the H series of the Samsung TV's do not play the subtitles. My previous tv also a D series had no problem with it, but since the upgrade to a bigger tv the problem started.
And removing ffmpeg.exe did unfortunatly not work :(

Update:

Just installed Universal Media Server Version 4.0.0-b1 as a test, and the subtitles work with ffmpeg on my Tv.

Thanks that is at least working now! Now I can watch the series with subtitles!!!

Great work guys!

I have latest UMS 4.1.1. and the software on my tv is fully updated as well, maybe that does it, do not know, I decided to test is during the weekend and the subtitles appeared out of the blue.
I was really happy!

Guy's if Any release breaks Subtitles please post in the forums so we can have a look at it. Samsung Tv's are a cause for a lot of issues as there seems to be differences between models sometimes. Thanks for sticking with UMS :)
