I have files with two languages, (English and Spanish) but on the player (Roku TV) I can only hear English even if I use the option to transcode the files. How can I adjust that it only reproduces the Spanish language?

It all depends on whether UMS is transcoding or streaming that video. If it is streaming then it is up to your player to handle subtitles and audio tracks.
When the videos need transcoding then UMS will use the language options you have set in the transcoding settings. You can set the language priority here There is a similar option for subtitles.
I think the code for Spanish is "es" or "spa" so just put that before "eng" and make sure a comma is separating them.
Another way to force a specific subtitle or audio track is to play from the #--TRANSCODE--# folder and you can chose the combination you want.
If this is not working then I will need to see your logs (see the section in red above) to know what is happening.
I think the way Roku is handled is different after a firmware change that broke normal transcoded videos, but it did support HLS transcoding which should supply all the audio tracks and subtitles to the player so you can select them.
