Recommended Settings for Internet Streaming?

So, now I'm able to connect to the UMS web interface over the internet. The problem is the videos are stuttering horribly.
Anyway to lower the quality or something so the videos are a lot more smooth? What settings or transcoders or whatnot should be used?
