When I go to my Volumes folder, a security alert appears.

I hit OK and after some spinup delay my external drives appeared.
If you don't see that, you may have previously accidentally clicked Don't Allow.
You can go to System Preferences --> Security & Privacy --> Privacy ...

Also, if you're still seeing notes that the app is damaged, try opening the terminal and typing:
sudo xattr -cr /Applications/Universal\ Media\ Server.app
or
sudo xattr -cr (and then drag the app into the terminal window to complete the path if stored elsewhere)

I'm running UMS on Monterey with Intel CPU.
Just to check. I redownloaded the UMS-10.12.0.dmg.
Mounted it and copied Universal Media Server to my apps.
Opening it or right-click-open the first time will show:
first.png
Cancel.
Then right-click-open a 2nd time and you should get:
second.png ...

In UMS, go to Transcoding Settings and then in the first section on the left "Common Transcode Settings", under Misc settings, add "mp4,mkv" to the "Skip transcoding for the following extensions" field. So I installed MacOS Catalina as a guest OS in VMWare Fusion and Universal Media Server 9.0.1 opens, connects to my Blu-ray player and streamed a compatible mp4 just fine.

Well, one would think the programmers have some idea how they implemented things and could have some idea as to what might happen. One of them could also be running the public beta. I only stream compatible files without any transcoding, so will those 32 bit files just not load and everything else will operate fine or will they inhibit the app from opening and functioning otherwise. If 64 bit versions cannot be added in time, it would be a good idea to detect and skip them on ...

On MacOS, Universal Media Server refuses to open with Java 9 installed. It puts up an alert saying something like it couldn't launch Java runtime.
Deleted Java 9 and reverted back to 8 and it opens again.
Maybe Min and Max Java versions need to be set so that it will still use 8 even if 9 is also ...
