No subtitles under High Sierra
I just installed UMS 7.0.0 on a fresh install of the os (10.13.4) on my new Mac and subtitles don't work. On top of that MEcoder doesn't work at all.
I played a file from the transcode folder:
MEncoder with and without subs --> This content cannot be played (800288E1)
FFMpeg with subs --> This content cannot be played (800288E1)
FFMpeg without subs --> ok

Go in TranscodingsSettings tab then select FFmpeg Video engine on the left and select Use font settings... and unselect Remux videos with tsMuxeR when possible....
Then select Common Transcode Settings from the left and in the sub Subtitles settings tab select one font.
And for the subtitles / audio language settings configuration see here.
Concerning MEncoder, you should disable tsMuxeR
